Main Course - Wild Blueberry Chicken Breasts

Ingredients

4 boneless skinless chicken breast halves
1 T. canola oil
½ cup Apricot jam or preserves
3 T. Dijon mustard
1/3 cup Granite Town Farms Wild Blueberry Vinaigrette


Directions

Rinse chicken and pat dry. Heat oil in a 10” – 12” skillet over medium-high heat. Add chicken, cook, turning as needed, until browned on both sides (about 6 minutes).

In a small bowl, combine jam and mustard. Spread mixture over tops of browned chicken. Reduce heat to medium-low, cover and cook until meat is no longer pink, about 15 minutes. Lift chicken to a platter, cover and keep warm.

Add Granite Town Farms Wild Blueberry Vinaigrette to pan, increase heat to high and bring to a boil. Boil, stirring, until sauce is reduced by a third and thickened. Pour sauce over chicken and serve.
